I bought myself a madeleine baking tray over the weekend, and so I thought I would bake some of these delicious citrus french treats today. One thing I will say, is that I am somewhat disappointed by the tray. As you can see the indentation of the shell like shape is very weak and barely noticable. I feel like I may have missed a trick and if any one knows how to keep the form stronger, let me know. If there is no other way, I will have to buy another one. So, my tip of the day is – look for a madeleine tray which has deeper stronger indentations.
However, the recipe is absolutely delicious and I wouldn’t change anything about it. Traditionally lemons are added to give the sweet citrus flavour, but I didn’t have any so I used oranges and they worked very well too. I added some chocolate chips because I’m a chocoholic. but these aren’t necessary. How were everyone’s weekends? It is a long weekend here in Berlin, so I have today off and although the weather is pretty grey, it was a gorgeous day yesterday and I watched les miserables in the evening… I do like it but sometimes musicals get a bit much. Every conversation turns to song… bit ridic. But would recommend it… bring tissues… it will make you cry. ALOT.
Here’s how you make them:
2 eggs100g caster sugar100g plain flour
1 orange, juice and zest
¾ tsp baking powder100g butter, melted and cooled slightly
1. Preheat the oven to 200°C and grease the madeleine tin and flour it.
2. Whisk together the eggs and the sugar. Then add in the rest of the ingredients. Leave to stand for 20 minutes.
3. Bake for 10 minutes, or until the mixture has risen a little in the middle and is fully cooked.
4. Leave to cool on a wire rack.
Eat while still warm!
