Oreo and Rosewater Cupcakes

So, yesterday I realized I haven’t made cupcakes in ages – which is really where my baking passion begun. As I was running around like a headless chicken for the whole day, I thought I would make a quick batch with some oreos I had. I am a big fan of rose water, so I thought I would add a cheeky splash or that with some pink food colouring. And… taaaaaddddaaaaaaa…… the flavours go really well together in my opinion. Do NOT use too much rosewater as it can be pretty over-powering.

Here is the recipe:

113 grams unsalted butter
130 grams granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
195 grams  all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
60 ml milk

6 oreos

Rose water icing:

230 grams icing sugar
113 grams unsalted butter
1 teaspoon rosewater flavouring
2 tablespoon milk

1. Preheat the oven to 175°C
2.  Use a pounder or a blender to crush the oreos into almost powder-like crumbs
3. Mix together the butter and sugar until light and fluffy
4. Add the eggs one at a time and mix in thoroughly
5. Mix in the milk
6. Sift in the flour, salt and the baking powder and fold in with a large metal spoon until thoroughly mixed.
7. Now add in the oreo crumbs until evenly distributed
8. Line a cupcake tin with cases and fill halfway with cake mix
9. Bake in the preheated oven for 12-15 minutes or until the cupcakes bounces back when touched
10. Leave to cool

1. Mix together the butter and icing sugar until lightened, fluffy and thoroughly mixed.
2. Mix in the milk and rosewater until evenly dispersed and thoroughly combined.
3. Place into a piping bag and pipe onto the cooled cupcakes

Let me know if you try them!!
